This simple and flavourful egg masala fry is made with basic kitchen ingredients like sesame oil, cumin seeds, mustard seeds, curry leaves, mint, and aromatic spices. The eggs are cooked directly in a rich masala base, giving a delicious and comforting dish that pairs perfectly with rice, roti, dosa, or bread.

Eggs are one of the most nutritious and versatile ingredients in cooking. This quick mint egg masala fry is a flavourful Indian dish made using simple spices and fresh herbs. The combination of sesame oil, curry leaves, mint and ghee gives the dish a rich aroma and taste.
This recipe is perfect for busy mornings or a quick meal when you want something satisfying and healthy.
Ingredients:
4 tbsp sesame oil
½ tsp cumin seeds
½ tsp mustard seeds
1 tsp split Bengal gram (chana dal)
1 tsp split black gram (urad dal)
Few curry leaves
1 onion, finely chopped
Few mint leaves, chopped
2 green chillies, chopped
1 tomato, chopped
Salt to taste
¼ tsp turmeric powder
½ tsp chilli powder
1 tsp coriander powder
½ tsp garam masala powder
2 tbsp ghee
2 eggs
Method:
Heat sesame oil in a pan over medium heat.
Add cumin seeds, mustard seeds, chana dal and urad dal. Allow them to crackle.
Add curry leaves, chopped onions, mint leaves and green chillies. Sauté until the onions become soft.
Add chopped tomatoes along with turmeric powder, chilli powder, coriander powder, garam masala and salt.
Cook the mixture until the tomatoes soften and the masala releases oil.
Add ghee and mix well.
Crack the eggs directly into the masala and sprinkle a little salt.
Gently mix and cook for 1–2 minutes until the eggs are cooked.
Serve hot with rice, roti or bread.
