๐ฒ Chicken Thigh Bone Rasam – A Healing Traditional Recipe
This Chicken Thigh Bone Rasam is a deeply nourishing, flavour-packed dish made using simple spices and slow cooking. Rich in minerals, collagen, and natural goodness, this rasam is perfect for boosting immunity, improving digestion, and providing comfort during tired or sick days.
Unlike regular rasam, the use of chicken thigh bones gives this dish a rich body and depth of flavour that is both satisfying and healing.
๐ Ingredients:
4 tablespoons oil
2 tablespoons ghee
3–4 cloves
1 small cinnamon stick
1 bay leaf
6–8 garlic cloves (crushed)
1-inch ginger (crushed)
2 medium onions (sliced)
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon fennel seeds
2 dried red chillies
2 green chillies (slit)
Few curry leaves
1 tablespoon black gram (urad dal)
Chicken thigh bones (with some meat)
Fresh coriander leaves
Fresh mint leaves
½ teaspoon turmeric powder
2 tomatoes (hand-crushed)
Coriander stems
Tamarind juice (small lemon-sized soaked and extracted)
1½–2 tablespoons homemade rasam powder
Salt to taste
Enough water
๐ถ️ Homemade Rasam Powder:
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 teaspoon black pepper
4–5 dried red chillies
4 garlic cloves
Few curry leaves
Dry roast everything until aromatic and grind into a coarse powder.
๐ฉ๐ณ Method
Heat oil and ghee in a pressure cooker.
Add cloves, cinnamon, and bay leaf. Let them release aroma.
Add crushed garlic and ginger, sautรฉ well.
Add sliced onions and cook until soft and slightly golden.
Add mustard seeds, cumin seeds, fennel seeds, urad dal, dried red chillies, green chillies, and curry leaves. Let them splutter.
Add chicken thigh bones and sautรฉ for a few minutes.
Add turmeric powder, crushed tomatoes, and coriander stems. Cook until slightly soft.
Pour in tamarind juice and add rasam powder.
Add enough water, salt, coriander leaves, and mint leaves.
Cover and pressure cook for 4–5 whistles.
Let it rest, open, mix gently, and serve hot.
