One-Pot Magic: Sambar Rice in 30 Mins | Healthy, Hearty South Indian Comfort!
Sambar Rice is a comforting and nutritious South Indian dish made with rice, lentils and vegetables, all cooked together with aromatic spices. This one-pot recipe is perfect for busy days when you want something wholesome without spending too much time in the kitchen.
The combination of lentils and rice provides protein and energy, while vegetables add fibre and essential nutrients. The use of spices like mustard seeds, cumin and homemade sambar powder gives it a rich, authentic flavour.
This recipe is simple, beginner-friendly, and ideal for family meals. Serve it hot with ghee, papad or pickle for a complete and satisfying experience.
Let’s start with the ingredients:
4 tablespoons of oil
1–2 tablespoons of ghee
Mustard seeds
Fenugreek seeds
Cumin seeds
Fennel seeds
Black gram (urad dal)
Split Bengal gram (chana dal)
Split yellow peas
Chopped onions
Dried red chillies
Chopped green chillies
Finely chopped curry leaves
Chopped potatoes
Chopped tomatoes
Chopped cucumber
Salt to taste
Turmeric powder
Chilli powder
Coriander powder
Homemade sambar powder
A pinch of garam masala
Soaked rice and toor dal (soaked for 30 minutes)
Water
Cooking Process:
Heat oil and ghee in a pressure cooker.
Add mustard seeds and let them splutter.
Now add fenugreek seeds, cumin seeds, fennel seeds, black gram, split Bengal gram and split yellow peas. Fry until golden and aromatic.
Add dried red chillies, green chillies and curry leaves. Sauté for a few seconds.
Now add chopped onions and cook until soft and slightly golden.
Add chopped potatoes and cook for a minute. Then add tomatoes and cook until they soften.
Now add chopped cucumber. Mix everything well.
Add salt, turmeric powder, chilli powder, coriander powder and homemade sambar powder. Mix thoroughly so the spices coat the vegetables.
Now add the soaked rice and toor dal. Mix well.
Add enough water, stir gently, and close the lid.
Cook for 2 to 3 whistles on medium heat.
Final Touch
Once the pressure releases, open the lid and give it a gentle mix.
Add a pinch of garam masala for extra flavour.
Your delicious Sambar Rice is now ready to serve!
Serve hot with ghee, papad or pickle.
