Mixed Vegetable Finger Millet (Ragi) Pancake – Simple & Healthy Recipe

Curd (yogurt) – ¼ cup

Onion – 1 (finely chopped)

Carrot – 1 small (grated)

Capsicum (bell pepper) – ¼ cup (finely chopped)

Tomato – 1 small (finely chopped)

Green chili – 1 (finely chopped, optional)

Coriander leaves – 2 tbsp (finely chopped)

Salt – to taste

Water – as needed to make a batter

Oil – for cooking


🥣 Method

1. Prepare the Batter

In a mixing bowl, add ragi flour, rice flour, and curd.

Mix well, then slowly add water to make a smooth, flowing batter (like dosa batter).

2. Add Vegetables

Mix in chopped onion, tomato, capsicum, grated carrot, green chili, and coriander leaves.

Add salt and stir well.

3. Cook the Pancake

Heat a non-stick tawa (griddle) and drizzle a little oil.

Pour a ladleful of batter and spread slightly into a thick pancake.

Cook on medium flame until the bottom turns golden brown.

Flip and cook the other side.
