Hearty Mutton & Mixed Vegetable Curry with Drumstick Leaves | Nutritious Homestyle Gravy|Easy Traditional Recipe

Ingredients:
Oil 4 Tbsps
Ghee 4 Tbsps (total: 2 now + 2 later)
2 medium onions, chopped
Curry leaves few
5–6 green chillies, slit
Ginger garlic paste 1 Tbsp
4 potatoes, sliced
4–6 beans, chopped
1–2 cups cabbage, chopped
2 brinjal (aubergine/eggplant) sliced
1 bunch drumstick leaves
Minced mutton
2 tomatoes, sliced
Turmeric powder 1 tsp
Red chilli powder 1–2 tsp
Coriander powder 2 tsp (optional)
Garam masala powder 2 tsp
Black pepper powder 2 tsp
Salt as needed.

Cooking Steps:
Step 1: Heat 4 Tbsp oil + 2 Tbsp ghee in a pan. Add chopped onions, curry leaves, and slit green chillies. Sauté till golden.
Step 2: Add 1 Tbsp ginger-garlic paste. Sauté till raw smell disappears.
Step 3: Add sliced potatoes, beans, cabbage, brinjal, and a pinch of salt. Sprinkle little water, mix, cover, and cook until slightly tender.
Step 4: Add drumstick leaves and minced mutton. Cover and cook till mutton is partially done.
Step 5: Add sliced tomatoes, sprinkle water if needed. Add turmeric, red chilli, coriander (optional), garam masala, and pepper powders. Add 2 Tbsp ghee. Mix thoroughly.
Step 6: Cover and cook till mutton and vegetables are perfectly done. Taste and adjust salt or pepper.
