 Healthy Mixed Veg Curry With Cauliflower Stem & Leaves | Zero-Waste Cooking



Today I’m sharing a nutritious and delicious mixed vegetable curry made with carrots, potatoes, chickpeas, brinjal (aubergine/eggplant), and the most ignored part — cauliflower leaves and stems. 🌿

This is a zero-waste recipe that’s healthy, tasty, and easy to prepare at home. Try it with rice, chapati, or dosa.


Ingredients:

Ghee (Clarified butter) (1–2 tsps)

Oil (3 tbsps)

Mustard seeds (½ tsp)

Cumin seeds (½ tsp)

Green chilies (2–3, chopped)

Curry leaves (few)

Onions (2, chopped)

Tomatoes (2, chopped & mashed)

Turmeric powder (½ tsp)

Red chili powder (1 tsp or to taste)

Black pepper powder (½ tsp)

Salt (to taste)

Boiled & mashed carrots (½ cup)

Boiled & mashed potatoes (½ cup)

Kabuli channa (chickpeas, ½ cup cooked)

Brinjal (aubergine/eggplant, 1 cup chopped)

Cooked & mashed cauliflower stem and leaves (1 cup)

Method:

1. Heat ghee + oil in a pan.

2. Add mustard seeds, cumin seeds, green chilies, and curry leaves.

3. Fry onions until golden brown.

4. Add tomatoes, turmeric, red chili powder, pepper powder, and salt. Mash well until soft.

5. Add cooked & mashed carrots, potatoes, chickpeas, brinjal, and cauliflower leaves & stem. Mix thoroughly.

6. Cover and cook for 8-10 minutes on low flame until all flavours combine.

7. Serve hot with rice, chapati, or dosa.
