Dosa batter – 2 cups
Finely chopped garlic – 1 tbsp
Baking powder – ½ tsp
Salt – as needed
Sugar – 1 pinch or 2 (optional)
Chopped green chillies – 3
Chopped onions – 2
Chopped carrots – 1 - 2 small
Chopped cucumber – ½
Chopped tomato – 1
Suji (semolina) – 2 tbsp
Turmeric powder – ¼ tsts
Pepper powder – ½ tsp
Oil – 4 tbsp
Ghee – 2 tsp
Eggs – 2

Step-by-Step Method:
1. In a large mixing bowl, add dosa batter.
2. To it, add finely chopped garlic, green chillies, onions, carrots, cucumber, and tomato.
3. Mix in 2 tablespoons of semolina, a pinch of baking powder, salt, sugar (optional), turmeric, and pepper.
4. Stir well and let it rest for 15 minutes.
5. Heat a dosa tawa (pan) on medium flame, add oil and ghee.
6. Pour the batter and spread evenly in a round shape.
7. Cover and cook until golden brown.
8. Flip gently and make small slits on top.
9. Add chopped onions, tomato, cucumber, and 2 eggs with salt.
10. Spread and drizzle some oil, then cover and cook until eggs are done.
11. Turn off the flame — Crispy Veg Egg Dosa is ready to serve!
