Chicken Neck (cleaned and soaked in turmeric and salt water)

4 tablespoons oil

Whole black pepper

Turmeric powder

Salt to taste

Method:

Heat oil and ghee in a pressure cooker. Add sliced onions and sauté until slightly golden. Add crushed garlic and ginger along with cloves, cinnamon, and bay leaf.

Next, add the cleaned chicken necks and fry lightly in the oil. Add cumin seeds, black pepper, turmeric powder, and salt. Mix well.

Add slit green chillies, fresh coriander, and mint leaves. Pour in enough water, cover, and cook for 2–3 whistles.

Once cooked, allow the pressure to release naturally. Serve hot.
