Healthy Beetroot Vegetable Rice with Masala Egg – Nutritious Meal
Introduction:
Healthy eating does not have to be complicated. This egg and vegetable rice recipe is a perfect example of a balanced meal made with simple ingredients. It combines protein-rich eggs, fibre-packed vegetables and aromatic spices to create a wholesome dish suitable for lunch or dinner.
Ingredients:
Oil
Ghee
Mustard seeds
Cumin seeds
Split black gram
Split Bengal gram
Yellow split peas
Groundnuts
Dried red chillies
Garlic
Onions
Tomatoes
Salt
Turmeric powder
Red chilli powder
Coriander powder
Boiled egg
Cucumber
Boiled potatoes
Grated beetroot
Garam masala
Cooked rice
Method:
Prepare tempering using oil, ghee, mustard seeds, cumin seeds and lentils.
Add garlic, chillies and onions and sauté until aromatic.
Cook tomatoes with spices.
Add boiled egg with small holes so they absorb the masala.
Cook vegetables with a little water and garam masala.
Finally mix the vegetable masala with cooked rice and ghee.
Serve hot with the flavoured egg.
