Beans, cabbage, cauliflower, potatoes (boiled and chopped),
Curry leaves,
4 green chillies (chopped),
2 large onions (chopped),
Turmeric powder,
Red chilli powder,
Salt,
2 eggs,
Garam masala,
1 tbsp ghee (clarified butter) (for finishing).

Method: [Cooking begins]
First, boil your beans, cabbage, cauliflower, and potatoes until just tender, then chop and set aside.
Heat a pan and add 3 tablespoons of oil along with 2 tablespoons of ghee.Once hot, add chopped curry leaves and let them splutter.
Toss in the chopped green chillies and then add the chopped onions. Sauté until golden and fragrant.
Add turmeric, red chilli powder, and salt. Mix well.
Now add the boiled vegetables to the pan.
Stir thoroughly to coat with all the spices.
Cover and cook gently so the flavours meld beautifully.
Crack in 2 eggs and sprinkle a little more salt. Stir gently to combine.
Add a generous pinch of garam masala – this will add that lovely warm aroma and depth of flavour.
Finally, add a tablespoon of ghee, cover the pan once more, and cook until the curry thickens and the water has mostly evaporated.
Open the lid and cook a little longer if needed to get that perfect consistency.
