Cucumber rice is a light and refreshing South Indian dish made with fresh vegetables, gentle spices, and cooked rice.

This recipe uses cucumber, garlic, cumin, curry leaves, and minimal spices, allowing the natural flavours to shine while keeping the meal healthy and balanced.

INGREDIENTS:

Oil – as needed

Cumin seeds

6 garlic cloves

Dried red chillies

Chopped green chillies

Sliced onions

Curry leaves

Chopped cucumber

Chopped tomato

Salt – to taste

Turmeric powder – a pinch

Cooked rice


COOKING PROCESS:

Heat a pan and add a little oil.

Add cumin seeds and let them crackle gently.

Now add six garlic cloves, dried red chillies, and chopped green chillies.

Sauté for a few seconds until the aroma is released.

Add sliced onions and fresh curry leaves.

Cook until the onions turn soft.

Now add chopped cucumber.

Sprinkle a little water to help it cook gently.

Add chopped tomato and salt to taste.

Mix well, cover, and cook until everything becomes soft.

Now add a pinch of turmeric powder, garam masala and cook well.

Once done, keep a small portion aside.

(This can be used as a side dish.)

To the remaining mixture, add cooked rice and a little salt if needed.

Mix gently until everything is well combined.

And now, our healthy cucumber rice is ready to serve.
